As a vegetarian, I love cooking Ben and Stuart BBQ pulled pork because it smells lovely and they both love it. I was of course jealous though until I got myself together and made BBQ Jackfruit as a vegan pulled pork alternative!

What is Jackfruit?
The ripe fruit is sweet but the unripe fruit is perfect for a meat substitute in meals like this bbq jackfruit. It is vegan and perfect for things like pulled jackfruit. For meals like this, you need young or unripe jackfruit.
Where can you buy jackfruit?
It is available ready cooked in cans or raw in cans already chopped up. I have used both for this but the cooked already pulled one is much easier.
How to cook with jackfruit to make bbq jackfruit
If you buy the ready cooked one it is probably great as a meat substitute in anything like this but cooking it yourself in the slow cooker is perfect.
Why choose jackfruit?
It is a great meat substitute that is full of flavour and loved but meat-eaters and vegetarians/vegans so it is well worth trying. If you have a vegan or vegetarian in your house then try cooking this for everyone. Read more about jackfruit here.
If following Slimming World jackfruit is usually syn free for the plain varieties whereas meals and sauces with it are generally synned. Jackfruit is a great alternative to Quorn, soya and similar alternatives.

Why you need vegetables to lose weight
Everyone knows vegetables are good for you, don’t they? They are healthy and filling for very few calories!
The best vegetables are those with low-calorie density. Basically, we are talking about the healthier vegetables – potatoes don’t count but butternut squash is much healthier for example!
This means if you eat 100g of spinach, for example, it is just 23 calories and obviously, 100g of anything would fill you up significantly. On the other hand, 100g of crisps, which would be just as filling, is around 536 calories!
