The best vegetables are those with low-calorie density. Basically, we are talking about the healthier vegetables – potatoes don’t count but butternut squash is much healthier for example!
This means if you eat 100g of spinach, for example, it is just 23 calories and obviously, 100g of anything would fill you up significantly. On the other hand, 100g of crisps, which would be just as filling, is around 536 calories!

If you have fussy children this is worth a try as it is full of flavour and the sort of thing kids enjoy. You never know, if they enjoy it you may be a perfect way to get more vegetables into them.
If they like the flavour but not the vegetables in it then pop all the roasted Mediterranean vegetables in a blender to make a tasty sauce to pour over pasta or chips! Discretely they will be eating all these vegetables and not even realise!

A nice alternative to a salad with a burger and the sauce is perfect to dip your chips in!
If you do not like one of the ingredients in this recipe it is really easy to swap for another one. Aubergines are lovely in this and if you have different varieties of courgettes like yellow ones, they can look pretty in this too.

Roasted Mediterranean vegetables in a balsamic tomato sauce is a perfect side dish for a variety of meals to help you add more vegetables to your meal. This is one easy dish that’s full of flavour.
Preheat oven to 200°c.
Bake for around 30 minutes or until the vegetables are all roasted but not too soft.
Aubergine is also nice in this dish if you fancy tweaking it.
